ECHO'S ECHO started out as an invitation to have some fun with writing a column..,,and I never dreamed that many words would come out ot my typewriter m one year's time. As 1 think back, several column names were thought up. among then] "Ideas from Irene", and "Incidental Items", until Fred Bird came up with ECHO'S ECHO. Catherine and Charlie Sr., and Judy and Charlie Jr. (all Merhars), plus all the Ace Hardware Dealers from the I~nge recently returned from an Ace Convention and Exhibition in New Orleans ..... and they all stayed at the Monte Leon Hotel in the French'Quarter. All they would have needed was a piano or an aecordian, and PRESTO. it would have been a Slovenian Quarter. The Merhars enjoyed the informative workshops and selected merchandise which will be available to area customers later this year. BY TttE WAY ..... Mrs. Enrico DeBarnardi wishes to clarify that she is 83 ( going on 84 in January ), and not "only" 80 as stated in last week's ECHO story on "Veterans Day...." She is a very young 83, keeping house. (usually see her hanging clothes at 6:(x)a.m.) and helping with the gardening ..... and we heartily agree, she has ever)' right to be proud of her age! ++++++++ AI, L, THE WAY FROM MERCED, CALIFORNIA comes another different and delicious sounding recipe for Pheasant, called ROAST PtIEASANT WITH PURPLE PLUM SAUCE. This contributor Mrs. Lee R: Boese, (Sandee Simonick, daughter of Millie and John) says the recipe is a favorite of her family and is frequently servbd to dinner guests, and adds. the same recipe can be used with chicken, for those who ardnot hunters. Ht)AST PtlEASANT WITH t)URPLE PLUM SAUCE 2 young pheasant 2 stalks celery 4 bacon slrips 1 onion halved 2 apple slices salt and pepper Place onion, celery and apple slices inside birds, 2 strips bacon over each breast. Season with salt and pepper. Roast 350 degrees ahoul 2 hours, basting with plum sauce during the last half hour of roaslmg. Serve remaining sauce in a saucehoat. Serves 4 to 6.
